Happy Valentine's Day!

I am still in love with the Valentine cards I posted Friday, so I figured I'd put them to good use. I whipped up a super easy batch of cookies, printed out the cards I made, and attached them to baggies. Easy peasy! I delivered them today to my co-workers.


These are probably one of the easiest cookies to whip up. Because they don't have a lot of butter, sugar or flour in them, they're better for you than normal cookies! And did I mention delicious??


Because I love you, here's the wonderful recipe!

1 Boxed Cake Mix (My favorite is Funfetti, but anything will work.)
1 Egg
2 1/4 - 2 1/2 cups Cool Whip (Some people just put a regular sized tub)

Mix all these things together. It's a pretty thick, sticky mixture, so I like to use a rubber spatula and mash the ingredients together rather than try to stir them. You want the Cool Whip really incorporated into the dry mix.

Pour a smallish amount of powdered sugar into a separate bowl. Just enough to cover each cookie.

Form small balls (I used a tbsp. measure) and roll in the powdered sugar. I like to plop my scooped cookie into the powdered sugar, give it a good coat and then roll them in my hands. It's a messy process, but it gets lots of sugar coverage on the cookies, which is what you want.

Cook in a preheated 350 degree oven for 12-15 minutes. Allow the cookies to cool for an additional 2 minutes on the cookie sheet, then transfer to a cooling rack.

These are some of my favorite cookies in the history of ever. After they've cooled they are the perfect amount of gooey and awesome.
